Homemade Traditional Spaetzle: A German Comfort Food Classic

When the leaves begin to turn and Oktoberfest season arrives, nothing says comfort quite like a plate of warm, buttery spaetzle (pronounced SHPEHT-sleh). This traditional German egg noodle is simple to make yet rich in flavor, and it’s the perfect side dish for brats, schnitzel, or roast chicken. Lightly chewy, golden from butter, and sprinkled with fresh herbs, spaetzle is a true taste of Bavaria that brings comfort to any fall gathering.

At All Occasions Catering, we love highlighting seasonal flavors that connect food to tradition—and homemade spaetzle is about as authentic as it gets. Want to bring a little Oktoberfest into your own kitchen? Here’s how to make it from scratch.

Traditional Spaetzle Recipe

Ingredients (serves 4):

  • 2 cups all-purpose flour

  • 1 tsp salt

  • 2 large eggs

  • ½ cup whole milk (plus a splash more if needed)

  • 2 tbsp unsalted butter

  • Fresh parsley, chopped (for garnish)

  • Freshly ground black pepper (optional)

Instructions:

  1. Make the batter – In a large bowl, whisk together flour and salt. Add eggs and milk, stirring until you have a smooth, thick batter. The consistency should be looser than bread dough but thicker than pancake batter.

  2. Boil water – Bring a large pot of salted water to a rolling boil.

  3. Form the spaetzle – Using a spaetzle maker, large-holed colander, or slotted spoon, press the batter through the holes directly into the boiling water. (Work in batches to avoid clumping.)

  4. Cook until done – The noodles will sink at first, then rise to the top when they’re ready—about 2–3 minutes. Use a slotted spoon to transfer them to a colander to drain.

  5. Buttery finish – In a large skillet, melt the butter over medium heat. Add the spaetzle and toss until lightly golden.

  6. Serve – Season with a little pepper, sprinkle with fresh parsley, and serve warm alongside your favorite fall entrée.
